Japchae (잡채) is usually part of the feast prepared during Chuseok. However, this dish is ubiquitous in Korea, and you can eat it on a regular day as well. It can be served as a part of the side dishes or by itself as the main meal over rice.

Japchae is composed of stir-fried glass noodles mixed with vegetables and meat. It is a beautiful combination of sweet and savory, making it a balanced and tasty treat that you won’t get enough of. The great thing about this dish is that you get to decide what you want to put in it; if you're going to opt for a vegetarian option, you can do that. There are also some recipes with seafood in it. You can also adjust it according to how sweet, salty, or spicy you want it to be.
